Sharing the Road with Tractor Trailers

For the automobile driver and his passengers, a collision with a truck, especially a tractor trailer, can have serious and sometimes fatal consequences. After the fact, it may not make much difference to the injured or dead which driver caused the accident. Moreover, automobile drivers cannot always avoid an accident with a tractor trailer because they have no control over the actions of either the truck driver or his employer the trucking company. Truck driver fatigue, driver substance abuse, poor truck maintenance, inadequate driver and safety training, as well as tight delivery schedules may play a role in tractor trailer accidents. What’s a driver to do?

Fortunately, an automobile driver can employ a number of defensive driving measures which will reduce the risk of colliding with a tractor trailer. First, it is imperative that automobile drivers recognize and respect the operational limitations of tractor trailers. Tractor trailers do not have the same ability to maneuver in traffic that automobiles do. Always keep this in mind as you drive with trucks nearby. For example, where a car traveling 55 MPH can come to a stop within about 265 feet, it will take a large truck 313 feet to stop.

This limitation leads to an important safety rule. Always keep your vehicle a safe distance behind or in front of a tractor trailer. Should you need to stop suddenly, you want the truck behind you to have sufficient space in which to stop without striking your vehicle’s rear end. Likewise, you want to be able to stop your own vehicle if the truck in front of you slows down suddenly. Never follow a truck closely or let one follow you closely.

A corollary to this rule involves situations where the automobile driver passes a truck and then abruptly cuts back into the truck’s travel lane without leaving sufficient distance between truck and car. Such an unexpected move can force the truck driver to slam on his brakes endangering not just the vehicle cutting in front but others close by. Make sure you have safely passed a truck, leaving plenty of distance between the two of you, before you attempt to move back into the truck’s travel lane. Likewise, don’t pass a tractor trailer quickly and then cut directly in front of it with the intention of exiting the highway. This behavior causes accidents.

You may have heard about “blind spots” or “no-zones”. You don’t want your vehicle traveling in a “blind spot” for more than a few seconds. Most vehicles, even cars, have blind spots. These are spaces you cannot see in your rear or side view mirrors. These “no-zones” around the left rear, right front, and the back of a tractor trailer are large. When your car moves into a “blind spot” while it passes a truck, the truck driver can’t see you or your car. The most immediate danger is that the truck driver will pull left or right into your travel lane without seeing you, causing a collision.

What can you do to reduce the risk of such a collision? Do not travel alongside a tractor trailer for longer than it takes you to move past the truck at a reasonable speed. This sounds simple enough, but it is not unusual for many of us to find ourselves cruising down a major highway beside a truck, sometimes for several miles at a time. The road ahead is clear, the weather is good, and we think nothing of it.

Make it a habit, as you approach a tractor trailer, to either pass the truck immediately or drop back in your lane behind the truck to a point where the truck driver can see your vehicle easily in his side view mirror. Likewise, before you begin passing a truck, make sure it doesn’t have its left turn signal activated and that it doesn’t appear to be moving, even slightly, towards your lane of travel. These are indications the truck driver is contemplating an imminent lane change. You can’t just assume the driver knows you’re there or that he will wait for you to complete your pass before he moves into your lane. Maybe he will, but maybe he won’t!

Sometimes, stopping your vehicle on the highway or on the shoulder is unavoidable. Remember, however, that there are few things more dangerous to all passengers and vehicles on the road than another vehicle stalled in a travel lane. If there is any way you can drive your vehicle entirely off the highway and also off the shoulder, do so.

Think ahead. If your vehicle seems to be developing mechanical problems or your gas gauge is near “empty”, don’t wait to take action to resolve these difficulties. Many a fatality has occurred when a tractor trailer driver fails to recognize soon enough that the vehicle ahead in his travel lane is at a dead stop. The trucker can’t come to a halt in time and ploughs into the rear of the stalled vehicle. Ordinarily, the automobile’s occupants don’t stand a chance under these circumstances.

It is best for you and your passengers to get out of harm’s way entirely if you can exit your broken down vehicle safely. After you activate your hazard lights, get as far off the highway as possible and as quickly as you can. Another auto or truck may crash into the rear of your car, and one or both vehicles could be knocked off the roadway in your direction. Keep in mind, however, that abandoning your vehicle on the road itself is extraordinarily dangerous for approaching vehicles.

On the other hand, it may be equally dangerous for you and your passengers to stay in your vehicle or try to push it off the road. Use good judgment under all the circumstances. One of the first things to do is contact the state and/or local police immediately to alert them to the road hazard. Law enforcement officers can warn approaching traffic of the hazard, reroute traffic safely around your broken down vehicle, and have it moved off the road promptly.

At night, vehicles stopped on the road or shoulder become even more dangerous. It can be almost as hazardous to stop on a highway shoulder after dark as it is to stop in a highway travel lane. No one sees well in the dark. Night vision can play strange tricks on what all of us perceive and think we see. Those tail lights far ahead of us may be nothing more than reflectors posted on either side of a driveway. On the other hand, the lights we see in the distance and assume belong to a vehicle in a moving travel lane may belong instead to a vehicle stalled on the road or shoulder. If the driver of a tractor trailer makes this error and follows what he perceives to be a moving lane of travel, he is likely to strike the stopped vehicle whether it is in a travel lane or on the shoulder. Truckers are especially prone to make this mistake at night when they are tired after a long day’s drive.

Such accidents are not uncommon, and unfortunately you read about them in the newspaper or see them reported on the television news. The most tragic examples involve cases where a “good Samaritan” stops in front of or behind the broken down automobile to render aid. The vehicle occupant(s) and the “good Samaritan” are checking under the hood of the car or are changing a tire when the tractor trailer slams into the rear of the vehicles. Don’t hang around a broken down vehicle at night. Leave its hazard lights in operation. If you can safely set out flares or triangles, do so, but, otherwise, leave the scene immediately and call for help. Stay in a safe place, out of the danger zone, until help arrives. State troopers and police officers are trained to handle these situations. You are not.

Watch out for the tractor trailer making a right turn. You don’t want to be the victim of what is commonly called a “right turn squeeze”. Tractor trailers cannot turn on a short radius. To make a sharp right turn at an intersection, they must “swing wide”. This means they often don’t approach the intersection entirely in what we think of as the “turning” lane. In making a right turn, the truck driver may move towards the left, either partially out of the right lane or completely out of it in the next lane over. This sometimes confuses the automobile operator approaching the same intersection. He may conclude, wrongly, that the truck is making a left turn or simply moving straight ahead.

In this situation, look first for the tractor trailer’s turn signals. Is the right turn signal activated? If so, you know the truck driver is preparing to turn right. Stay in your lane behind the truck. Don’t try to squeeze in to the right of the truck thinking you can get the jump on him when the light turns green. Don’t pull up to the intersection alongside the tractor trailer and assume its driver knows you’re there. You will have moved directly into his “blind spot”.

Just because your driver’s side window is directly opposite the truck’s passenger side window doesn’t mean the truck driver can look out his window and see you. Usually he can’t because he sits high up in the truck cab. If the truck driver doesn’t know you’re there, he is likely to cut you off as he makes his turn. Suddenly, you find yourself in the middle of a “squeeze play” between the truck on your left and the curb on your right.

Of course, you may have passed beyond the rear turn signals of a long tractor trailer when the trucker first activates his signal. As a result, in the end, you can’t rely simply on whether or not the truck’s right turn signal is blinking. You have to make a judgment call, and it is better to err on the side of caution. Before sliding into the space immediately to the right of a tractor trailer at an intersection, keep in mind that the truck may start turning right, directly into your path. When the red light turns green or as you approach the front end of a truck on your left side, watch the truck carefully for signs it is beginning to move into your lane of travel. If it does, take quick action to avoid it.

There is always the potential for a collision when either your vehicle or a tractor trailer is merging into traffic. If you merge into traffic improperly, from the shoulder of a highway, for example, you may cause a nearby tractor trailer to brake or turn suddenly. This may, in turn, cause a collision. Whenever you see a truck ahead of you merging into traffic, slow down and let the truck merge in front of you. Trucks simply don’t have the ability to accelerate as quickly as automobiles do.

The most potentially dangerous place on the road to find yourself is between two tractor trailers – both within a few hundred feet in front of and behind your vehicle. Just imagine what will happen to you and your car if the truck ahead slows down or stops suddenly without warning, and the truck behind you has to do the same when you begin to slow down or stop for the truck ahead. It is not a pretty picture. Remember, you can’t see around a tractor trailer to know what is going on in front of it which means you are unlikely to have any warning of the impending slow down of the truck ahead of you.

It goes without saying that unsafe speed contributes to tractor trailer accidents. Never approach a tractor trailer too fast from the rear. Also keep in mind that it is easy to misjudge a truck’s speed, especially as it approaches you.

There are many ways motorists, primarily automobile operators, can share the roads and highways more safely with nearby trucks and tractor trailers. This is not to suggest that truck drivers do not engage in unsafe behavior themselves. They do. However, whenever there is a collision between an automobile and tractor trailer, the automobile operator and his passengers are much more likely to die in the crash than the truck driver. Statistics tell us that 86 percent of those persons killed in accidents involving large trucks were not occupants of the truck. They were, for the most part, occupants of passenger vehicles. As a result, it is the automobile driver who has the most to lose in any collision with a large truck. Consequently, it is up to the automobile driver to keep the odds in his favor by driving defensively whenever he sees tractor trailers and large trucks close by.

Indie Film Financing and Movie Distribution – Dancing Nude

Indie film financing and movie distribution reminds of what it would feel like dancing nude on stage (much respect for exotic dancers at Larry Flynt’s Hustler Club!). You show up to pitch your movie project and need to be able to dance to a film investor’s music. It’s their stage and not yours as an indie filmmaker seeking film funding. They want you to make a sellable movie which appeals to movie distributors so the production can make money.

Most investors I’ve met with are not interested in putting hard money into indie art house films because those are tough sells to movie distributors and overseas film buyers aren’t usually interested in seeing them. The dialogue and scenes of certain art house type films don’t translate well to foreign buyers and movie viewers. Action, horror and skin does not need subtitles for people to follow the story is what I’ve been told by distributors. Talking head movies can make no sense to viewers that don’t understand subtle lines spoken in a foreign language.

Independent film financing continues to change as indie movie distribution gets more financially shaky. The place it’s hitting indie movie producers hardest is right at the source – film financing. Film investors right now aren’t feeling excited about putting money into movies that do not have bankable name actors. This is not like so-called indie movies that have A-list actors or are produced for millions of dollars. Those type of indie film passion projects you can make once you’ve made it in the entertainment business at the studio level.

Indie film investors and movie distributors won’t expect you to have an A-list actor, but they do want producers to have actors (B-list or C-list or D-list) with some name recognition or celebrity. The first question film investors and movie distributors ask is who the cast is. This is where most indie movie producers are blown out of the water because they have an unknown cast of actors. Plus there is a glut of indie movies being made because technology has made it more affordable to make movies.

The bright side is that entertaining indie movies are being made that might not otherwise ever have seen light of day before. The downside is meaningful movie distribution (getting paid) for indie produced films continues to shrink as indie films being made rises (supply and demand 101). I talked to one movie distributor that caters to releasing independent films and they told me they receive new film submissions daily.

They were honest saying they get very sellable movies and ones that are less than appealing, but with so many movies out there they no longer offer a majority of producers advance money against film royalties or pay a lump cash “buy-out” to secure distribution rights. Their business viewpoint is most indie filmmakers are just happy seeing their movie released. The term they used was “glorified showreel” for an indie filmmaker to display they can make a feature film. So, they acquire many of their movie releases without paying an advance or offering a “buy-out” agreement.

Not making a profit from a movie does not make financial sense for film investors that expect to see money made. When people put up money to produce a movie they want a return on their investment. Otherwise it’s no longer a movie investment. It becomes a film donation of money they’re giving away with no expectations. I’ve been on the “dog and pony show” circuit meeting with potential film investors and learning invaluable lessons.

I’m in the habit now of talking to indie movie distributors before writing a screenplay to see what types of films are selling and what actors or celebrity names attached to a potential project appeal to them. This is not like chasing trends, but it gives producers a sharper picture of the sales climate for indie films. Sometimes distributors will give me a short list of actors or celebrities to consider that fit an independent movie budget. Movie sales outside of the U.S. are where a bulk of the money is made for indie filmmakers.

Movie distributors and film sales agents can tell you what actors and celebrity talent is translating to movie sales overseas at the indie level. These won’t be A-list names, but having someone with some kind of name is a great selling point to help your movie standout from others. Brief cameos of known actors or celebrities used to be a good way to keep talent cost down and add a bankable name to your cast.

That has changed lately from my conversations with distribution companies. Movie distributors now expect any name talent attached to have a meaningful part in the movie instead of a few minutes in a cameo role. Cameo scenes can still work if there is a visual hook that grabs the attention of viewers in some way. But having name talent say a couple of lines with no special hook won’t fly anymore.

Another way to make an indie film in need of funding more attractive to investors is to attach talent that has been in a movie or TV show of note. Their name as an actor might not be that well-known yet, but rising stars that have appeared in a popular movie or TV show can give your movie broader appeal. If you cast them in a supporting role keep working days on the set down to a minimum to save your budget. Try to write their scenes so they can be shot in one or two days.

When you’re pitching to serious film investors they will want to be given a detailed movie budget and distribution plan on how you plan on making money from the film’s release. The Catch-22 that happens a lot is that most movie distributors that cater to releasing indie films won’t commit to any deal until they’ve screened the movie.

There is not built-in distribution like with studio budget films. Film investors that are not traditionally part of the entertainment business can get turned off when a producer does not have a distribution deal already in place. They don’t understand the Catch-22 of indie filmmaking and distribution. This is where a movie producer really needs to have a solid pitch that explains the financial dynamics of indie film distribution.

Most film investors will pass on an indie movie producer’s financing pitch that mentions self-distribution in it. From a movie investor’s business perspective it takes entirely too long for an indie movie to generate money going the self-distribution route. It’s like the old school way of selling your movie out of the trunk of your car at places, but now it’s done online using digital distribution and direct sales via a blog. That’s a long grind that most investors will not be interested in waiting around for. Moving one unit of a movie at a time is too slow of trickle for investors.

A possible way around the Catch-22 is to reach out to movie distributors while you are pitching to film investors. With a firm budget number and possible cast attached you can gauge to see if there is any meaningful distribution interest in the movie. It’s always possible a distributor will tell you that they would offer an advance or “buy-out” deal. They usually won’t give you a hard number, but even a ballpark figure of what they might offer can let you know if your budget makes financial sense to approach movie investors with.

I know one savvy indie movie producer that makes 4-6 movies a year on very reasonable budgets and knows they’re already making a profit from the advance money alone. The film royalty payments are a bonus. The producer keeps budgets extremely affordable and streamlined at every phase of production. Once you have a track record with a distribution company you know what you can expect to be paid. Then you can offer film investors a percent on their money invested into the production that makes sense.

Social networking with other indie filmmakers lets you hear what’s happening with movie distribution from other people’s real life experiences. A cool thing I’ve been hearing about is that there are film investors that won’t put up money to make movie that is going to be self-distributed, but they will roll the dice on a feature that is going to specific film festivals. Not the art house film festivals. The ones that are very genre specific like for horror or action films. Like Screamfest Horror Film Festival or Action on Film (AOF). Film buyers attend these events and meaningful distribution deals are made.

Independent film financing and movie distribution are areas of the entertainment business all filmmakers will have to deal with and learn from each experience. I was in the hot seat today pitching to a film investor. I’ve streamlined the budget as much as I can without making the plot lose steam.

The jam I’m in as a producer is there are hard costs that cannot be avoided that include lots of gun play including two rigging shots where baddies get shot and are blown backwards off their feet. Badass action films need experienced and seasoned film crews to pull-off hardcore action shots off clean and safe. The cast I want to hire has the perfect appeal and name recognition for this indie action movie to rock viewers. There is nothing that can get lost in the translation in this film for foreign film buyers and movie viewers.

What I think got lost in the translation with the potential film investor today is if I keep taking out below-the-line crew to save money I’m going to have to do rewrites to the screenplay to take out action scenes. These are selling points that will hurt sales if they are written out. But it’s my job as an indie filmmaker to balance a budget that appeals to film investors. We’ll see how this goes. Dogs and Cats Living Together

Dogs and cats are supposedly life-long enemies. Hence the phrase, “fighting like cats and dogs.” Having always owned both cats and dogs, I find the phrase and the premise to be far more inaccurate than accurate. Of course, we all know that there are those dogs that will simply chase every cat they see and those cats that will never tolerate a dog. However, it has been my experience that handled correctly, the vast majority of dogs and cats can live together. They may not learn to love each other; but they certainly can learn to tolerate each other’s presence. Dogs and cats that are raised with each other typically do fine their entire lives. They may actually accept an animal of another species more easily than one of their own, in that there are fewer fights over dominance and territory.

There are some dogs that should not be kept with cats. Dogs with a strong hunting heritage may always view cats as prey and may never be able to be trusted with any small animals. In addition to hunting dogs, terriers such as Jack Russells and pitbulls are often poor companions for cats. These dogs have an incredibly strong predatory instinct; they chase and attack moving objects without thinking about whom or what the object may be. Cats and other small pets are just too much of a temptation for these dogs.

Other dogs respond less to the animal than the situation and will leave alone a cat that sits still, but chase and attack one that moves. This is especially true of dogs that are kept outside. There is something about being out of the house that really pushes the hunting instinct into overdrive and will often result in even the most docile indoor dog attempting to chase cats once outside. So, one would not want to make the assumption that a cat and dog who tolerate each other indoors will do the same outside. The dog may decide to attack the cat. Finally, dogs that have a history of attacking cats are likely to do so again and should not be trusted with cats. If you are planning on rescuing a previously-owned dog, it is a good idea to get a history of the dog’s attitudes and behaviors around cats before bringing it into a house with cats. Many shelters will allow you to ‘test’ the dog by introducing it to a cat before completing the adoption.

Most cats, if they have had positive experiences with dogs, will tolerate canines in the house. Those that will not typically have had some prior negative interaction that is firmly embedded in their memories. Because most cats, even those that hate dogs, do not attack without provocation, these cats may be able to live with a dog. However, they probably will never bond with the dog, will avoid the dog at all costs, and will be pretty miserable. It is kinder to leave these cats in a feline-only household. Again, it is often possible to find out the history of a cat before adopting it, or to test the cat’s reactions to dogs in an adoption situation.

So which cats and dog can get along? The answer is just about all of the rest of them. In the best of circumstances, cats and dogs really become friends, playing and sleeping together. In other situations, cats and dogs may never be overly friendly, but they can learn to tolerate and behave themselves with other members of the family, including those of other species. As long as you are willing to work out a positive introduction and protect the animals from physical harm, these species usually get along. The process may take up to six or eight weeks, or even longer, but can be successfully accomplished.

If you are thinking of bringing a cat into a dog household, or vice-versa, there are steps that you can take to ensure the success of the relationship. First, because a dog can kill a cat, safety is your first concern. The dog needs to be able to be kept separated from the cat. This can be accomplished with a crate, or a separate room. The dog should have a refresher obedience course, so that it will sit, stay, and come to you when told, and leave the cat alone if ordered to. The dog needs to remember that the people, not the dog, rule the house. This way you can ‘explain’ to the dog, if necessary, that the cat is yours and needs to be treated with respect. In addition, the cat needs to have a safe haven. This means that the cat’s food and litter boxes need to be inaccessible to the dog and that the cat has places to run and hide. For example, leave a few bookcase shelves empty so the cat can climb to them, put a cat door into a closed bedroom, or use baby gates to separate the dog from the cat’s own room.

I keep my cats’ litter boxes, toys, scratching posts, water, and food in an extra bedroom. I use a baby gate to keep the dogs out of the room. I have cut a small cat-size opening into the closed mesh of the gate so that the cats can dash through it if necessary and not have to leap the gate. My dogs respect the gate, but if you have dogs that leap over it, you may need to cut the cat door into the room door or install a screen door with an opening large enough for the cats.

The initial meeting and first few weeks are critical times to set the tone for the future, so it is important to make all introductions go as smoothly as possible. The key is to remember that these animals will be together for a lifetime; there is no reason to rush their meetings. If bringing a cat into the house, provide the cat with its own bedroom for the first few weeks or longer. The litter box and food should be placed in this room. The dog in the house can smell the cat under the door, but has no real need to meet the new member of the family until the cat is comfortable and bored with its personal space. If this is a young kitten, they may end up living in this room for several more weeks. Once the cat is doing well in its own room, you can let the cat explore the house, undisturbed by the dog. You can actually put the dog in the cat’s room while the cat is out, so that the dog really gets to experience the cat’s scent without bothering the cat. You can also get the pets used to each other’s scents by swapping toys, towels, or other items between them.

The initial face to face meeting should be done after the new cat is familiar with the entire house. Make sure that the dog is on a leash and under control. Have another person near the cat to provide help, if needed. Keep the meeting short and positive. Praise the dog for being wonderful around the cat. Use food rewards if appropriate and make sure that the dog understands that good things happen when the cat is present. After a few, short positive meetings, it is time to let the cat explore for longer periods, with the dog present and on the leash. If this step proceeds calmly, let the dog off the leash and watch the interactions. Make sure you are always there to stop any problems before they can accelerate. Do not allow the dog to be aggressive in any way to the cat, and lavishly praise the dog for good behavior. Be certain that the cat has access to hiding places. If aggression occurs at any stage of the introductions, return to the previous stage and slow down. Even if all looks great, do not leave the cat alone with the dog until you are truly positive that everything is running smoothly. This means that if they cannot be supervised, the cat should be left in its bedroom or the dog kept crated.

Bringing a dog into a cat household is relatively easy. The dog should be kept on a leash for the initial introductions and never left unsupervised. Make sure that all animals are praised for their wonderful behavior when they are together. As previously discussed, the dog can be crated or the cat left in a bedroom when they cannot be watched. Since the cat is already familiar with its territory and the dog is a newcomer, the dynamics of the relationship often turn in the cat’s favor, making the transition relatively easy.

Puppies and kittens do present unique challenges. Kittens must be protected from dogs at all times simply because any dog is big enough to badly hurt or kill a young kitten. A kitten must always be closely supervised even around the best behaved of dogs. Provide the kitten with appropriate toys of its own. Do not let the kitten ‘play attack’ the dog or chase it. This can rapidly escalate into a dangerous situation. For the same reason, do not let the dog ‘play’ with the kitten. The kitten must be kept in a safe room when an adult it not home. My kittens stayed in their own room when I was not at home and at bedtime until they were approximately six months old.

Rambunctious puppies may also be a problem. Without meaning to, an energetic puppy can harm a kitten or even an adult cat. It is up to you to make sure that their interactions are monitored so that no one gets hurt. It is also really important to exercise and play with the puppy routinely. Make sure the puppy has its own toys and uses them. A tired puppy is less likely to bother the cat and less likely to be a behavior problem in the house.

It takes work, patience, and time to introduce cats and dogs to each other. However, the positive outcome is well worth the work. My cats and dogs play, eat, relax, and sleep together. I get tremendous pleasure watching them. You will be pleasantly surprised how much positive energy is brought into your home by having both cats and dogs living there.

Understanding Fats…

While cooking oils are pure fat, they are not created equal. All cooking oils are a combination of saturated, polyunsaturated and monounsaturated fats. It is the concentration of hydrogen that determines how they are categorized. Without getting too technical, the following information will hopefully provide a basic understanding of fats.

Saturated Fats:

Saturated fats are found in animal products and are converted into cholesterol by the liver. Butter, margarine, meats and dairy products are especially high in saturated fat. Saturated fat will elevate blood cholesterol levels and is associated with increased rates of heart disease and stroke. It is solid at room temperature.

Unsaturated Fats:

There are two types of unsaturated fats: monounsaturated and polyunsaturated. Monounsaturated and polyunsaturated fats do not raise blood cholesterol levels. Canola and olive oils contain the highest proportion of monounsaturated fat when compared with other cooking oils. Safflower and corn oil are the highest in polyunsaturated fats.

Trans Fats:

Trans fats are man-made or processed fats, which are made from a liquid oil. When hydrogen is added to liquid vegetable oil and pressure is added, the result is a stiffer fat, like the fat found in a can of Crisco. Trans fats are also called hydrogenated fats and are found in margarine and trans fat partially hydrogenated vegetable oils. Trans fats pose a greater risk of heart disease than saturated fats (which were once believed to be the worst kind of fats). While it is true that saturated fats (found in butter, cheese, beef, coconut and palm oil) raise total cholesterol levels, trans fats not only raise total cholesterol levels, they also deplete good cholesterol (HDL), which helps protect against heart disease.

Partially Hydrogenated Fats:

If you have health concerns, read food labels to see if they list “partially hydrogenated oil” as an ingredient. Partially hydrogenated oils are present in all commercially made donuts, crackers, cookies, pastries, deep-fat fried foods (including those from all major fast-food chains), potato and corn chips, imitation cheeses, and confectionery fats found in frosting and candies. All of these products contain unsaturated fats which can be damaged at high temperatures and converted to a trans fat.

Understanding the Difference between Refined and Unrefined Cooking Oils…

Refined Oils:

Refined oils are extracted by solvent extraction for further refining in order to produce clear oil that is free from rancidity and foreign matter. These oils are used as medium cooking oils (225°F to 350°F), high cooking oils (350°F to 450°F) and deep frying oils (greater than 450°F). Refined oils are bland and pale. They have negligible flavor and aroma which makes them ideal for preparing delicately flavored dishes. Use for baking, sauteing, stir-fry and wok cooking, baking, searing, browning, deep-frying and pan-frying.

Unrefined Oils:

Unrefined oils are processed by cold-pressed and expeller-pressed methods. They carry the true flavor of the plant from which the oil is made. The strong flavor of unrefined oils may overwhelm the dish or baked good that is prepared with them; however, strong flavor is not always undesirable and some unrefined oils are used as flavoring agents. (Generally, when there is a strong natural flavor and aroma, there is a higher amount of nutritional value.) These oils are typically called salad oils and are used for salad dressings, marinades, sauces and as light cooking oils for light sautes and low heat baking. As a general rule, they should not be cooked at high temperatures. (The one exception is unrefined safflower oil which is capable of reaching a temperature necessary for deep-frying.) Unrefined oils should not be used at temperatures above 320°F.

Various Cooking Oils and Recommended Use…

Some oils have low smoke points, which means that they will burn at low temperatures. These oils, typically called salad oils, are best used for salad dressings, marinades, sauces and as light cooking oils for light sautes and low heat baking. Other cooking oils have a high smoke point, which means that they can reach higher temperatures without smoking. These particular oils are ideal for deep-frying, pan-frying and sauteing. The information below will discuss various types of cooking oils and their recommended use.

  • Canola – Canola oil is a monounsaturated oil extracted from the seeds of a plant in the mustard family. It has a mild flavor and aroma and is most commonly available in a refined form. It has a bland flavor and is recommended for deep-frying, pan-frying, sauteing, baking and preparing salad dressings. Its mild flavor and relatively high smoke point (400°F) make refined canola oil a good all-purpose oil. Of all the cooking oils, canola has the least amount of saturated fat (6%) and is the least expensive.
  • Corn – Made from the germ of the corn kernel, corn oil is almost tasteless and is high in polyunsaturated fat (62%). It is used to make margarine, salad dressings and mayonnaise. With a smoke point of 450°F, it is excellent for pan-frying and deep-frying because it can withstand high temperatures without smoking.
  • Olive – Olive oil is a monounsaturated oil extracted from tree-ripened olives. The color may range from light amber to green with flavors that range from bland to extremely strong. Olive oil is graded according to its degree of acidity and the process used to extract the oil. Oil labeled “virgin” is cold pressed (a process using no heat or chemicals) and contains low levels of acidity. It provides the body with vitamins E and F. Oil labeled “pure” uses heat and chemicals to process olive residue from subsequent pressings. Unrefined olive oil has a smoke point of 320°F and is recommended for baking, sauteing, stir-frying and wok cooking.
  • Peanut – Made from pressed, steam-cooked peanuts, peanut oil contains 18% saturated fat. It has a bland flavor and is good for cooking because it doesn’t absorb or transfer flavors. Frying with peanut oil gives foods a rich, nutty, roasted flavor. Refined peanut oil has a smoke point of 450°F and is recommended for stir-frying, wok cooking, pan-frying and deep-frying.
  • Safflower – Made from safflower seeds, safflower oil is pale yellow and almost flavorless. It has more polyunsaturated fat that other oils (78%) but lacks vitamin E. It is considered a good, all-purpose cooking oil. Safflower oil is a favorite for salads because it does not solidify when chilled. Refined safflower oil has a smoke point of 450°F and is recommended for deep-frying, pan-frying, sauteing and baking.
  • Sesame – Made from pressed sesame seeds, sesame oil is high in polyunsaturated fat (43%) and monounsaturated fat (42%). It comes in two varieties, light and dark. Light sesame oil is made with untoasted sesame seeds and has a nutty flavor. It is especially good for stir-frying, wok cooking and preparing dressings. Dark sesame oil (Asian) is made with toasted sesame seeds and has a much stronger flavor than light sesame oil. It should only be used in small quantities for flavoring foods; it is not suitable for cooking. Refined sesame oil has a smoke point of 350°F and semirefined sesame oil has a smoke point of 450°F.
  • Soybean – Highly refined soybean oil is reasonably priced, very mild, versatile and it represents approximately 80% of all the cooking oils used in commercial food production in the USA. Almost any product that lists vegetable oil as an ingredient most likely contains refined soybean oil. With a smoke point of 450°F, soybean oil is a good, all-purpose oil. Use for deep-frying, pan-frying, wok cooking, stir-frying and baking.
  • Sunflower – Made from sunflower seeds, sunflower oil is pale yellow in color, has a bland flavor and is considered a good, all-purpose oil. It is low in saturated fat and high in polyunsaturated fat. Semirefined sunflower oil has a smoke point of 450°F and is excellent for sauteing, preparing salad dressings, deep-frying and pan-frying.
  • Vegetable – Vegetable oil is an inexpensive, all-purpose oil which is a blend of refined oils made from vegetables, nuts and seeds. Most vegetable oils are made from soybeans and are high in monounsaturated fat, high in polyunsaturated fat and low in saturated fat. Designed to have a mild flavor and a high smoke point, it is recommended for deep-frying, pan-frying, sauteing and baking.

    Note: The American Heart Association Cookbook, Fifth Edition, recommends all of the above cooking oils with the exception of peanut oil due to its high saturated fat content.

    Miscellaneous Facts, Tips and Warnings…

  • Essential fatty acids are vital for good health. Without some fats in our diets, we cannot absorb the fat-soluble vitamins A, D, E and K.
  • All cooking oils contain 100% fat.
  • A tablespoon of cooking oil contains 14 grams of fat.
  • All cooking oils contain the same number of calories – one tablespoon contains 120 calories.
  • For better health, choose oils/fats that are low in saturated fat.
  • Cooking oil used for deep-frying can usually be reused several times. Wait until the oil has cooled completely before handling then strain it into a clean sealable container for storing.
  • The most accurate method of testing the temperature of oil for deep-frying is a deep-fat thermometer. Make sure the bulb of your thermometer is completely immersed in the oil, but not touching the bottom of the pan. Otherwise, the reading could be affected. If a deep-fat thermometer is not available, the age-old method of dropping a square of bread into the hot oil will suffice. If the bread cube rises to the surface crackling and frying, the oil’s hot enough.

    Rule of thumb when using this method – If the bread cube browns uniformly in:

    60 seconds, the temperature is 350-365°F

    40 seconds, the temperature is about 365-382°F

    20 seconds, the temperature is about 382-390°F


  • To dispose of used cooking oil, carefully pour cooled oil into a strong sealable container, such as an old plastic jar with a lid or old coffee can. (Avoid using breakable glass jars.) If the amount of oil is small, place the filled, sealed jar in the trash. Dispose of large amounts of cooking oil by taking it to the local landfill.
  • Do not pour cooking oil down the kitchen drain. Even small amounts will eventually clog the plumbing.
  • Remember to always wait until cooking oil has cooled completely before handling.

    Selling Your Car at Auction – A Beginners Guide

    With many people struggling to make ends meet and TV adverts with catchy jingles tempting you to sell your car for quick cash, it can seem appealing. Your car (next to your house) is probably your most expensive piece of equity and with this in mind, it can be tempting to sell it, purchase a cheaper make or model and pocket the difference.

    Car auctions, whether they be physical or on-line, can be a good way of selling your car, safe in the knowledge that an experienced auctioneer has yours, and the auction house’s, best interest at heart. You may think that these things do not always necessarily go hand in hand but bear in mind that the auction house will take a percentage of the purchase price (buyers fee) as commission so it is in their interest to get you as much money as possible!

    So, let’s start with the basics:

    What is a car auction?

    Car auctions have a long history within the automotive industry with many different types of business using them to either sell excess stock or purchase new stock for resale.

    They are extremely popular in the USA and Japan and are gaining popularity in the UK where they are no longer seen as dirty places. This is mainly thanks to the industry making a concerted effort to change the reputation of the sector and make it more appealing to all people, not just those ‘in the trade’.

    Car auctions sell cars, commercial vehicles, motorcycles, plant equipment, and some of them will also sell large goods vehicles and possibly caravans and motor homes.

    Auction houses do not own the vehicles which they sell. They merely act as a shop front for many different types of seller. These can include leasing companies, fleet management companies, dealer groups, banks and financial institutions, governmental bodies, police, and of course private individuals.

    Let’s look at each of these different sellers more closely:

    Leasing Companies

    Leasing companies rent vehicles to companies or private drivers for a set period of time (sometimes as little as 1 year) so the vehicles put into auction are usually young models with a good mileage and because the cars are usually leased from new, they may have only had one person driving them whilst going to a meeting twice a week! When the lease or rental period ends, leasing companies will enter their old stock into auction as their customers are more interested in leasing brand new vehicles. These companies are usually owned by banks or financial institutions.

    Fleet Management Companies

    These are similar to Leasing companies in that they lease their stock to organisations but differ in that they will supply their customers with a whole fleet of cars and manage that fleet on behalf of their client. Again, when the rental period for the fleet ends, the companies wish to take advantage of the capital wrapped up in their stock in order to replace it with new models.

    Dealer Groups

    If you have ever part exchanged your old car at one of the large, glass fronted dealers or showrooms, chances are it has subsequently been put into auction and sold. Dealer groups will also enter old or unsold stock (known as overage) from their forecourts in order to keep their showrooms looking fresh with the latest that the manufacturer(s) have to offer. Of course, buying a vehicle at auction which has been entered by a dealer group can be a bit riskier than the leasing or fleet companies as if someone has part exchanged their old car, you have to ask yourself why did they do it, what sort of person where they, how well did they keep it and how many previous keepers has it had?

    Banks and financial institutions

    Banks and financial institutions can fall into fleet and leasing companies as many of them have these elements within their respective corporate families and follow the same trends. However, banks can also enter cars into auctions that have been repossessed from their customers after defaults on loan or mortgage repayments. Obviously a car itself is of little or no interest to a bank, they are only interested in the value and the money which can be made from it.

    Governmental bodies

    Government bodies will run fleets of cars for their staff and key executives and will update this fleet on a regular basis with the old stock being put into auction. Separate Government departments will also enter a wide range of vehicles at auction from ex-defence Land Rovers or staff cars, to lawn mowers and diggers used on the local playing fields or in the local cemetery! Local Government may also enter cars into auction that have been seized by bailiffs follow non payment of bills such as Council Tax (depending on the Local Authority in question, these can be quite high end models).

    Police

    Police forces will auction vehicles seized from convicted criminals to either compensate victims, break up an illegal estate or regain public money gained fraudulently. The police also auction a variety of other items seized for similar reasons and may do this through an auction house or by holding their own property auctions. As well as these lots, all police forces will also run a fleet of undercover or unmarked vehicles and these will need to be constantly updated, with the old stock being put into auction to raise funds for the force.

    Private individuals

    This is the category of seller that we are really interested in. Private sellers can enter and purchase cars from auction and if their car is not sold first time round, they can tell the auction house to keep putting it in until they receive an acceptable bid. Be warned though, auction houses will charge you for each time they enter the car so if you have sold your car after a couple of sales, you may want to check your reserve price or rethink your options.

    How does it work?

    Most auctions work on the same principal; your prospective buyers bid against one another, raising the amount which they offer with each new bid they make until their competitors drop out and they are left as the highest bidder. All of your bidders will be in the auction hall (although an online element is becoming increasing popular) and all bids are made in the open. This type of auction is known as an ‘English Auction and its formula applies to the majority of vehicle auctions.

    When your vehicle arrives at the auction centre, it will be inspected by the auctions technicians who will highlight any scratches, dents, scuffs, rust, etc and value the overall damage costs. It can be important to consider this when you think about your reserve as trade buyers will have a good idea of the vehicles value and of the damage costs and will factor this into their bidding. The damage cost will not be shown to any buyers, it is purely for the auction house’s records.

    Your car will then be photographed and ‘lotted’, the process whereby your car is entered into a sale. It will be assigned a lot number and will be placed in the auctions yard to be viewed by the buyers.

    At the same time, your vehicles details will be published online for buyers to look at before they arrive at the auction. This is a good way of building interest in your car and most auction houses will send our copies of their latest catalogues to their buyers.

    You should do your best to ensure that you car is entered with all of the paperwork and material which you have relating to it:

    • V5c Registration Document
    • Hand book
    • Any other manuals (SatNav, radio, etc)
    • Service book
    • Historic garage receipts of details of work carried out
    • Locking wheel nut key (if your car has one)
    • Any other information or items that came with your car when you bought it

    All of these things are important to buyers and if you were buying a car, you would expect to have everything that you could have relating to it so think of these when you enter your car.

    Of course, you will also have to leave your key and any spares with the auction.

    In the auction halls…

    When your vehicle is lining up to be driven into the auction halls, buyers will start to look closely at the car, looking for any damage and they may open the doors to look at the interior. Buyers are not usually allowed to test drive cars or look under the bonnet so this process of final inspection is important to them.

    Once your car is in place in front of the auctioneer, the cars details and any special features, such as extra interior features, alloy wheels, etc, will be read to the audience. The auctioneer will then start the bidding with an opening bid below your reserve. If there is a great deal of interest in your car, bids can rise fast with many people competing. Eventually, the auctioneer may drop the increases in size to amounts that the last couple of bidders feel more comfortable with. This could mean that you see increases of £50 for your car rather than the £500s you were seeing right at the start. The buyer with the final highest bid has now bought your car as long as their highest bid was over your reserve. At this point the buyer has entered into a legal contract.

    If the final highest bid did not quite meet your reserve, the auctioneer may class this a provisional bid and the auction will then attempt to negotiate between you and the buyer. At this point, you can ask for more money or demand that your reserve be met. If you go too high and the buyer pulls out, the sale will fall through. It is a balancing act between what the buyer is prepared to offer and the minimum amount you are willing to accept.

    If you reach an agreement, the sale will go through as normal.

    If agreement cannot be reached, you have the option to take your car out of future auctions and keep it, or enter it again in the hope of getting a better bid. Hopefully this won’t happen and you will sell your car but if you have to consider this you should remember that many auctions are used by motor traders who attend most weeks and if they see the same car go through each week, they will be less inclined to offer a high bid. Auctions will also charge you for each time you enter your car, with some also charging storage after a certain amount of time and sales, so you should consider these costs when thinking of the money you intend to make from the sale.

    How much will it cost?

    The fee to enter your car in an auction can range from £15-£30 depending on the size and reputation of the auction house and will be deducted from the total sale value of the car. This fee will be payable each time you enter your car in to a sale if it does not sell.

    On top of this, there will also be commission deducted from the sale price. This will be on an increasing scale and will depend on the sale price of the vehicle in question. Always check with the auction house before you enter your vehicle and shop around the auction houses local to you to get the best deal.

    After the sale

    Assuming that a deal has been reached or that your vehicle sold straight away, the auction will not give any of the vehicles paperwork to the new buyer until full payment has been made. Once this happens, the auction will pass all material relating to the car to the buyer.

    Most auction companies will also deal with the legal change in ownership on your behalf and will communicate the sale to DVLA Swansea with the vehicles V5c Registration Document on your behalf, as you do not know the buyers details. Some auctions charge for this service so check at time of entry.

    Car auction companies are usually pretty quick in sending you the money for your car and can be as quick as a couple of days after the sale, usually by cheque or bank transfer. The entry charges and commission taken by the auction will usually be details on a remittance advice sent to you once your money has been sent to you.

    Other things to consider:

    When you are thinking of putting your car into an auction, you may want to think of these things which can increase your chances of getting a sale:

    • Is the interior clean?
    • Having crisp packets, drinks bottles or cigarette ends n the ashtray is not appealing and you would not by a car like that so why would anyone else?
    • Do you smoke in your car?
    • If you smoke in your car, try to banish the smell of stale smoke as best you can. Smoking in cars can also lead to burns on seats, trim and just about anywhere else so be aware of them.
    • Have you got a complete or good service history on your car?

    Buyers look at the service history on your car to see how it has been kept. A good service history usually mean that the rest of the car has been looked after properly. Main dealer stamps are highly sought in service history but your local approved garage will suffice.

    Is there any tax left on your car?

    Selling a car with tax allows the buyer to drive away with that car on the day they bought it. If your car does not have tax, they buyer will need to insure it, then sort out the tax before they can drive it. Since auction houses will not pass any vehicle documents to the buyer before full payment is made, this can lead to a great deal of hassle for the buyer as they will have to go away, sort the insurance, come back and pay for the car, go away and sort the tax (now that they have the MOT certificate), come back and finally drive away.

    Trade buyers buying many cars will not worry about the hassle factor too much as they will get their new cars delivered by transporter, it mainly matters to them for the resale value which tax can add onto their forecourts.

    When does the MOT run out (or does it even have one?)

    Selling your car with MOT gives your car a boost in auction as buyers will just see it as an added expense if it does not have one. Your buyer will also need to have a valid MOT before they can ensure the car!

    Are there cosmetic things that could be tidied or corrected before you enter it?

    Are there stains on seats or interior trim that can be removed? Is there a brake light bulb that could be replaced? Are there stickers on the windows that could be removed?

    Is it worthwhile sorting out that scratch before you enter it?

    Getting a small scratch or dent repaired before you enter your car can increase the chances of it selling as it will not be noted on the damage report (as long as it is a good job!)

    Do you have a spare key, SatNav disk, or old garage bills in the back of a cupboard somewhere?

    You should do your upmost to ensure that you give everything associated with your car to the auction along with your vehicle. Things like spare keys add to the value and old garage receipts let your buyer know exactly what has been done, added, changed or mended to their new car as well as who done it.

    Obviously, if your car has built in SatNav, you should include the disk for this along with any instruction manuals.

    Remember, auction houses will inspect your car and so will our buyers sonly sort out scratches or other problems if you feel you can be a good job of it otherwise it just means that someone else has to redo your attempt meaning more cost and time!

    Many exotic sports cars are the stuff of legend. The world’s fastest car, the McLaren F1, for instance is a well-known exotic. Although only around one hundred F1s were produced and the manufacturer is not a household name (outside of the Grand Prix circuits of course), the McLarens are coveted sports cars. All exotic sports cars are highly sought after and, as status symbols, are second to none in the sports car world.

    But, assuming that you can afford it, is an exotic sports car for you?

    It is easy to be seduced by the allure of owning an exotic sports car. Owning one can be very tempting. Amongst the purists, the cars themselves are often considered the pinnacle of design. Any enthusiast who has the means will tell you that when an opportunity to invest in an exotic sports car presents itself, resistance can be very difficult.

    One should try and be objective about the proposition though.

    Before making such a major commitment, there are three factors you should consider.

    Exotic Sports Cars Are Very Expense

    The cost of owning such a prestigious car, does not end when you part with the initial payment. Even if one can afford the initial asking price of an exotic (and not many can), one needs to be aware of the likely ongoing running expenses , which can be significant. The maintenance and repair of an exotic car is certain to be expensive compared to non-exotic vehicles and a buyer should attempt to discover what kind of costs he or she is likely to experience in order to keep the car in running order. There can be no cost cutting on parts for these high end vehicles.

    Parts for prestige cars are likely to be in short supply, if they are available at all. The likelihood that the owners of exotic sports cars will need to have some parts custom made during their ownership of the vehicle is quite high. And the cost will be significant. This is especially true of older exotics, many of which will have been orphaned when their original manufacturer stopped making cars. Not only will this prove extremely expensive, one can also expect it to be time consuming as well. And, as time passes, the necessary investment will only become greater.

    Your usual mechanic cannot be expected to be able to repair exotic sports cars. You will need specialised mechanics with specialised tools to be able to ensure that appropriate and professional repairs are carried out. Not only will such individuals be, in all probability much more expensive than your usual mechanics, you would be very fortunate if you found one in your town. You should expect to have to do a lot of traveling in order to find suitable mechanical help.

    All too often a sports car buff will purchase an exotic, without though to the ongoing costs, and, as a consequence be completely unprepared to handle additional future expenses. A thorough planning of expected costs and the means to meet those costs would certainly be in order.

    What types of team interaction and discussions normally occur on a day-to-day basis with your team? If you’re like most businesses, it’s along the lines of the following:
